Try this Zucchini Banana Bread recipe to sneak in some veggies without losing any of the sweet chocolate goodness:

🍞For the bread:
1 cup shredded zucchini
2 medium ripe bananas, mashed
3⁄4 cup cashew butter (or all natural peanut butter, almond butter, or tahini)
2 tbsp. pure maple syrup or honey 2 eggs
1 tsp. vanilla extract
1⁄2 cup coconut flour
1⁄2 tsp. baking soda
1⁄2 tsp. ground cinnamon 1/3 cup chocolate chips

🍫For the chocolate drizzle:
2 tbsp. chocolate chips 1 tsp. coconut oil

Preheat the oven to 350°F. Coat the inside of a 9-inch square baking pan with nonstick cooking spray, and line the bottom with parchment paper. In a large bowl, mix together the zucchini, banana, cashew butter, maple syrup, eggs, and vanilla extract until smooth and well combined. Add the coconut flour, baking soda, and cinnamon and stir to combine, then fold in 1/3 cup of the chocolate chips. Pour the batter into the prepared pan. Bake for 30 to 40 minutes, until a toothpick comes out clean. Meanwhile, in a small saucepan, combine the remaining 2 tablespoons of chocolate chips with the coconut oil. Place the pan over low heat and cook, stirring frequently, until the chocolate is melted. Drizzle the chocolate over the bread when it comes out of the oven. Slice and serve.

In all seriousness, it’s interesting how food aversions can carry all the way into adulthood. You may be getting bored of eating the same bland dishes daily in an attempt to “stay consistent” and remove any guesswork from having to cook.
