Makes 20 cookies

Ingredients:
● 1 cup Brown Rice Flour
● 3⁄4 cup Vanilla Protein Powder
● 1 pinch of Salt
● 1⁄2 cup Plain Nonfat Greek Yogurt
● 1⁄2 cup Sugar Substitute (like Monk Fruit)
● 1 tsp Vanilla Extract
● 2-3 tbsp or more as needed Unsweetened Almond Milk
● 1⁄2 cup Peanut Butter
● 1⁄2 cup PB Powder
● Hershey Kisses for topping

Instructions:
Aunt Josee’s Peanut Butter Kisses Cookies are an homage to my aunt who used to make these every Christmas for us and they were my all time favorite.
Start by mixing brown rice flour, the vanilla protein powder for a healthier twist, the pb powder and a pinch of salt in a bowl. This combination sets the stage for a tasty treat.
Add the peanut butter, Greek yogurt, and vanilla extract to the mix. The creamy peanut butter and yogurt create a deliciously smooth texture, while the vanilla adds a classic, comforting flavor.
Pour in the milk of choice gradually. You’re aiming for a dough that’s easy to handle, not too wet or dry.
Preheat your oven to 175°C (350°F), getting ready for baking.
Shape the dough into small balls, and give them a light sugar substitute sprinkle. Press a Hershey’s Kiss into the center of each cookie, a simple yet special touch.

Bake for 8-10 minutes until they turn a light golden color. These cookies are a nod to those special holiday moments, perfect for sharing with loved ones.
