Sushi Matsue in Ebisu is where I would easily be a regular if I lived in Tokyo. It is small and convivial with some of the best sushi you can have in Tokyo. Go for omakase and you will have a weaving flight of sushi, sashimi and small appetizers like this steamed seasonal spiny crab from Ishikawa. You don’t want this to end and it doesn't have to.
