A simple yet delightful recipe for claypot prawns and glass noodles. This dish pairs perfectly with rice and various side dishes.

Ingredients:
- 10 Large prawns
- 150g glass noodles
- 3 Coriander (divided)
- 2 Spring onions (divided)
- 8 Slices of ginger
- 10 Cloves of garlic (halved)
- 3 Tbsp Cooking oil
- 2 Tbsp Shaoxing wine
2Tbsp Sesame oil
Sauce:
- 2 Tbsp Oyster sauce
- 2 Tbsp Soy sauce
- 1.5 Tbsp Dark soy sauce
- 1.5 Tbsp Fish sauce
- 1 Tbsp Shaoxing wine
- 1 tsp Sesame oil
- 1 tsp White pepper
- 1 Cup Water

Instructions:
1. Begin by cleaning, drying, and trimming the sharp edges of the prawns.
2. Soak the glass noodles in warm water for 10 minutes, then drain them.
3. In a small bowl, combine the oyster sauce, soy sauce, dark soy sauce, Shaoxing wine, white pepper, sesame oil and water.
4. Heat up a claypot over medium-high heat and add 3 tbsp of oil. Add the prawns and cook each side for approximately 40 seconds. Set them aside.
5. Reduce the heat to medium and stir in the ginger, garlic, divided coriander roots, and the white part of the spring onions. Fry until fragrant.
6. Add the glass noodles and half of the sauce mixture. Mix everything thoroughly.
7. Cover the pot with a lid and cook for 2 minutes.
8. Pour in the remaining sauce mixture, along with some chopped coriander, spring onions, and the cooked prawns. Drizzle in some Shaoxing wine.
9. Cover the pot again and cook for another 2 minutes.
10. Finish by drizzling a bit of sesame oil before serving. Enjoy your dish!
