Eggcellent Frittata with Bacon, Spinach, and Brie! Smokey bacon, gooey Brie, vibrant spinach, and sweet red pepper that’ll leave you craving seconds. #leesamantha #frittata

Recipe:
Olive oil
8 slices of smoked streaky bacon, chopped
1 red onion, diced
Red pepper, diced
3 spring onions, sliced diagonally
Handful of spinach
1 Brie
8 large eggs, beaten
4 tbsp grated Parmesan cheese
Salt and black pepper

1. Preheat the oven to 180°C.
2. In a large mixing bowl whisk together eggs, Parmesan, spring onions and season generously with pepper. Whisk your egg mixture well. Set aside.
3. Heat some olive oil in a 10-inch ovenproof frying pan and fry the bacon for 3-4 minutes. Add the red onions and sweat for a few minutes. Add the red pepper and continue to cook until the bacon is golden brown. Add the spring onions(white) and sweat for 3-4 minutes until everything is tender. Stir in spinach, roughly mixing it through the vegetables. Season with salt.
4. Now place the cooked bacon and vegetable mixture into the bowl with the egg mixture and whisk to combine.
5. Warm the pan over medium heat and drizzle some olive oil. Pour the mixture back into it. Cut one Brie into chunks and scatter on top. As the omelette begins to bubble and set around the edges, grate some Parmesan on top and season with pepper.
6. Place the pan in the hot oven for around 10 minutes until cooked through and golden on top.
Serve warm.
