Received numerous questions about my Simple Soy Sauce Chicken recipe featured in one of my FoodArt diary videos. During the pandemic, I also shared a version with carrots. So here’s a brief demo. This dish is incredibly versatile! Whether it's mushrooms, carrots, potatoes, or black fungus, feel free to make it your own and customize it to suit your taste preferences.

Recipe:
2 boneless chicken whole legs, 6 cloves garlic, 3 slices ginger, scallions.

Marinade:
1 tbsp grated ginger
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp Shaoxing wine
1 tsp cornstarch (optional)

Sauce:
1/2 cup water
1 tbsp oyster sauce
3 tbsp soy sauce
2 tbsp dark soy sauce
A dash of white pepper
Pinch of salt
1 tsp sugar
1 tbsp Shaoxing wine

Heat a wok over high heat and add 1 tbsp of cooking oil. When hot, add the chicken and allow the chicken to sear until golden. Add garlic, scallions (white part), and ginger. Fry until fragrant. Pour in Shaoxing wine around the wok, give it a quick toss. Mix in the sauce and reduce heat to medium-low. Add more water if needed. Cook with the lid on for 5 minutes. After 5 minutes, open the lid, turn up the heat to high, and reduce or thicken the sauce. Adjust seasoning if necessary. Toss in scallions, and it's ready to serve!
