When Tacos Punta Cabras closed its first location in 2017, Joshua Gil was finally free to do what he really wanted, which was to cook around the world with his chef friends and make one-shot-and-done menus without the grind of running a restaurant. At the time, Tacos Punta Cabras was probably the best taco restaurant to ever open in Santa Monica, traditionally not seen as a bastion of great Mexican cooking. Now, after three years traveling, Gil has finally settled into a more permanent role as the chef of Mírame in Beverly Hills. Even with just two months under its belt, Mírame might be the most exciting new restaurant to open during this pandemic-riddled year in LA.
