For the ladies asking about QUICK healthy meals my biggest tip would be to keep it simple! You don’t need lots of ingredients or lengthy recipes to put something delicious together. I LOVE tomatoes and they are something I eat a lot of as part of my mediterranean style diet. Not only are they delicious but they are also SUPER versatile and can be used in a variety of ways. One of my favourite, simple tomato dishes is a panzella salad (recipe on my blog!). We home grow our tomatoes and it’s SO different when you go to restaurants and try their tomatoes!! There’s NOTHING like home grown fruit and vegetables 🍅
