Sunday’s are for pancake stacks ? These guys are packed full of fibre and taste like a fluffy cloud of delight ? And of course they’re vegan ? I used a @deliciouslyella recipe with a few modifications: ➡️ 1 tsp baking power ➡️ 1 tsp chia seeds ➡️ 1 tbsp maple syrup ➡️ 400ml plant milk (I used oat) ➡️ 200g buckwheat flour (any flour works) ➡️ 100g @deliciouslyella Bircher muesli (plain oats work well too) ➡️ 1 tbsp coconut oil ✅ Just pop in a blender and combine until a smooth batter is formed. Fry them in coconut oil on a low to medium heat and flip one browned ?? I topped mine with stewed blueberries and apple ?
