I’m sure you have 50 pancake day recipes to follow, so here’s something a little different - vegan peanut butter jelly brownies using @eatreal.today ingredients (#ad) ??‍♀️ These little nuggets of joy are ridiculously delicious! Save this recipe for later, perhaps some weekend baking? Here’s what to do: ➡️ Preheat oven to 180°C. Line an 8x8 baking tin with parchment and grease the edges. ➡️ Make a flax egg - mix 6 tbsp water with 2 tbsp ground flaxseed & leave to thicken. ➡️ Melt 110g vegan chocolate & chop another 110g into chocolate chip sized pieces ➡️ In a mixing bowl, beat 100g vegan butter and 180g @eatreal.today coconut sugar with a spoon or electric mixer until smooth ➡️ Add 1 tbsp @eatreal.today peanut butter, 2 tsp vanilla extract, your flax egg and the melted chocolate. Whisk until well-combined. ➡️ Sift and fold in 100g @eatreal.today almond flour, 40g cocoa powder, 1 tsp baking powder and a pinch of salt. ➡️ Mix in the chocolate chips and a handful of @eatreal.today chopped hazelnuts. ➡️ Scoop the batter into the baking tin and smooth over the top with a spatula. ➡️ Dollop ½ tsp of @eatreal.today peanut butter and ½ tsp of raspberry jam in three rows of three and then run a knife through to create a marble pattern. ➡️ Place the tin on the middle shelf of the oven and bake for 30-45 minutes depending on how gooey you like them. ➡️ Leave the brownies in the tin to cool and firm for a further 20 minutes. ➡️ Slice them up, top with some fresh raspberries and serve with a dollop of vegan yogurt!
