PREP AHEAD AT HOME! I like to borrow one of my restaurant practices from @townsmanboston, for when I cook at home: prepare your vegetables ahead, by cleaning, trimming and then packaging them in "sets". Make different vegetable sets for different dishes or nights of the week, labeled accordingly. This way, when you're in a rush, just grab your pre-prepped vegetables and go! It's the little tips and tricks that cut down on your time behind the stove, which equates to more time with your family, friends and dinner guests. ?????
