For lunch next day, #chef @yone_asakusa took me to his favorite Tonkatsu shop in Asakusa called Sugita. Here at the eating counter, you can see the precise technique chef Sugita employs for frying which sets it apart from all others. He uses two kinds of oil and temperatures. Indecisive that I am – or just out of pure gluttony, I ordered both the fatty pork and the giant shrimp, which I had no difficulty devouring. @pichetong #FRtakeover #tokyo #japan
