Final #japan @djneilarmstrong #FRTakeover, and why not finish with the most famous cuisine from the land of the rising sun, sushi. It's true, you can get sushi almost anywhere in japan. Sometimes its quick and easy - you can get it delivered via robotic conveyor belt in large quantities for cheap like in my very first post. Or it can be a memorable eating experience packed into a single bite. Pictured above is the latter. I think this would be called "Ama Ebi", or sweet shrimp, with shrimp roe. underneath is a touch of wasabe with rice already flavored with soy sauce by a technique that doesn't leave the rice soggy and broken down. if you want to get traditional, you can put away the chopsticks and just eat with your hands. Sushi is all about the ingredients - the freshness, the texture -  and its not easy to import the ingredients here anywhere else, so if you want to eat something like this you're going to have to pack your passport and come over to this side of the world. Sushi is simple. No california rolls here. No spider rolls covered in sauce. Just the taste of the fish. That is good sushi here. I had the opportunity to eat this from a private chef tasting in tokyo, set up by some local foodies so i couldn't tell you where this is.
