Remember that tortilla wrap trend? Here is a sushi version that came out DELICIOUS! I used leftover cooked salmon but you can easily make this your own with raw fish or even shrimp!

1. Take about 1lb cooked (and cooled) salmon and add 1Tbsp mayo, 1Tbsp soy, 1Tbsp rice vinegar, 1tsp sesame oil, fresh squeezed lemon juice and sesame seeds and mix together

2. Grab your seaweed sheet and cut halfway through the middle

3. Fill each of the 4 sections with your desired toppings and fold up, across and down

4. Eat as is or dip in some soy and enjoy!
