I believe that food must be prepared with heart. When I prepare a dish, I think about the people who will consume it as I cook it. I also think about the history of the dish and try my best to honour the method of preparation. Mee Hoon Kueh is a dish that is familiar to me because it is a recipe that has been cooked by my mother a lot when I was little. It is also precious to me because it represents my Hokkien roots. Whenever I cook it, I remember my mother’s love for me, and hope my children feel my love for them as they eat it.
