The months between September-November are the season for hairy crabs 大闸蟹. The hairy crabs earned its name for the distinctive brown “fur” on its claws. They are prized for their creamy roe and juicy meat. Females have deep orange creamy curd like roe, males have yellowish more liquidy roe. Because of its exquisite nature, the crabs are traditionally steamed with dried perilla leaves and sliced ginger and enjoy with vinegar and grated ginger 🤤!
