Here I’ve rustled up a bowl of broccoli, green lentil, onion and carrot brown rice and superseeds - which also works fab for meal prep - accompanied by a potato fritter nest filled with a broccoli, leek and red pepper vegan masala curry and a cup of super fruits tea. Yup, it’s basically a carb-fest of left over meal prep from this week and what a super satisfying combo it is! I love going for long walks in the fresh air, weight based home workouts and keeping active throughout the day; whilst I eat light and uplifting meals throughout the majority of the week I find a restock on carbs not only a pleasure but also an essential energy boost that makes a real difference to my training and stamina.
