It was on the global culture of sugar...agriculture to consumption, health effects, and the unique spiritual culture of this ubiquitous sweetness in Papua New Guinea and Haiti. India has some of the highest cases of diabetes on earth, only parts of the Middle East tend to be higher. Diabetes was only one narrative for the reason to go to India, mostly in Jaipur and Haridwar. Somehow I ended up in Varanasi (Benares) for a few days, more for a spiritual rest from traveling. While walking the streets of this ancient religious city, I stumbled upon Ram Ji. A dentist by profession, at the time, he thought he was 85 years old. Ram learned dentistry from his father. Decades ago, he decided to end his practice in a traditional storefront, dedicating his life to fixing the teeth for the poorest of poor as a roadside street dentist. Chaotic as this may appear, Ram Ji and his son were complete givers of love in the art of tooth extraction, dentures, and cavity filling. All the while in the accompaniment of honking car horns and bicycle belles, somehow, they kept all the instruments clean. I sat on the curb with Ram Ji for two days, watching the constant customer flow from morning till night. Ram attributes sweets as the most significant cause for tooth decay amongst all his clients. It was apparent why…everywhere in Varanasi are sweet shops. Even the chai shops I so love to visit immerse each pot of tea with enough sugar to make Coke seem sugarless. You may wonder why this story never was published—the writer changed three times over the year I spent photographing this story in eight or nine countries. The final narrative shifted only to sugar's health issues—my good friend and colleague, @robertclarkphoto, created beautiful studio photography of sugary sweets. On a sad note, a few years ago, I learned the dearest Ram Ji had passed.
