Photos by @hellokrisdavidson As I sat sipping pulque under a warm Mexican sun, watching this guard dog and his best friend, the small horse, I felt as though I had become a character in a magical realism story. These close friends ran around playing in the yard of agave and cacti in the small pueblo of Lagunilla outside of San Miguel de Allende (the dog was on a long leash).
Pulque is a lightly alcoholic beverage made from the fermented sap within the maguey (agave) plant. Common in central Mexico, it is touted by locals as a health drink. There is a saying about pulque: Sólo le falta un grado para ser carne–it is only a bit shy of being meat. Mass production of the drink remains tricky, as attempting to bottle the fermented beverage has been met with mixed results. The beverage is best enjoyed at the site of the plant, becoming something of an immersive mystical experience. #Mexico #Agave #pulque
