They don’t waste ANYTHING. Even with plants that some people view as weeds (they are actually edible, they’re just wild greens) my Yiayia will boil them to make a dish called “vlita”, and it’s SO good. ⁣ ⁣ To give you an idea, here are just SOME of the things my grandparents grow: figs, tomatoes, cucumbers, capsicums (peppers), zucchini, eggplant, beans, spring onions, lemons, oranges, mangoes, pomegranates, lettuce, apples, persimmons, olives, most herbs and even camomile to make tea - I love trying whatever’s in season from their garden! They also still swap food with their Italian and Greek neighbours, who moved to Australia around the same time (Yiayia and Papou ALWAYS have the most produce and eggs to swap - their gardening skills are amazing! 🍋🥭🥬). They make their own olive oil, pasta sauce and will preserve anything they can’t eat, swap or share with neighbours or family. Any scraps or peel become compost or food for the chickens - literally NOTHING is wasted.
