Mediterranean summer eating: easy, genuine and fresh. I made this farro salad with juicy but acidic green tomatoes, crunchy cucumbers, a mix of olives, crumbly and salty feta, chickpeas and big bunch of fresh mint. All dressed in garlic infused olive oil and a squeeze of fresh lemon juice. One of the best dishes one could ask for in days as hot as these.
