I brought myself to turn on the oven to make this mini rice cakes; Tah-chin; the Persian rice, yoghurt, egg and saffron. A good pinch of black pepper, and if you fancy, a sprinkle of black cumin seeds. Normally, there are pieces of saffron chicken inside, another version from the south has fried eggplants. But I prefer this dish bite sized, and simply accompanied by only "mast-o khiar" yoghurt with finally chopped cucumber, fresh mint and rose petals. When @ladrasanse nominated me to do a rice recipe in collaboration with @risoflora_official, I knew I wanted to do something Iranian, as rice is a staple to Persian cuisine.
