How do I know it's February? Because everywhere I go I see Girl Scouts hitting the streets with their sashes and adorable sales pitches that no mom can resist. I think we can all agree that it’s best that we only have the opportunity to buy these cookies once a year!

Don’t misunderstand – we love us some Girl Scout cookies, but we make sure to treat them like a treat (and share!). I’m pretty sure it feels like each sleeve of Thin Mints is a single serving!

This year, instead of overdoing it on Thin Mints, try this yummy Skinny Mint Green Smoothie instead. Not only will you be loading up with healthy fats, fiber, leafy greens, and fruit, it also has plenty of chocolate flavor! Seriously, healthy AND chocolate? Is there anything better!

SKINNY MINT GREEN SMOOTHIE | Serves 2

INGREDIENTS:
2 cups almond milk, unsweetened
1 ½ cups fresh spinach
½ cup fresh mint leaves
2 bananas
½ avocado
4 medjool dates pitted
2 tablespoons cacao powder
OPTIONAL: cacao nibs sprinkled on top

INSTRUCTIONS:
1. Blend spinach, mint, and almond milk until smooth.
2. Add remaining ingredients, and blend until smooth. Enjoy!
