Line a standard muffin tin with 12 cupcake papers. In a medium bowl, stir together the peanut butter, sea salt, and maple syrup, if using. Set aside. 2. Place chocolate chips and coconut oil in a microwave-safe bowl. Heat in microwave at 50% power for 20-30 second intervals, stirring gently in-between, being careful not to create any air bubbles. Only microwave until most of the chocolate is melted with some unmelted pieces remaining. Stir gently until smooth. Be careful not to let chocolate get too hot or it can burn. 3. Spoon a little of the melted chocolate into each well. Use the tip of the spoon to push some of the chocolate a little up the sides of the papers, but making sure there’s still enough to coat the bottom. This will help seal in the peanut butter filling. 4. Drop a spoonful of the peanut butter mixture into each cup. Spoon the remaining melted chocolate on top the peanut butter. Gently tap the pan on the counter to flatten them out, if desired. Place in fridge to set up before eating. Store in cool, dry place.
