Carrot, Nut ricotta, preserved elderflower.

Three kinds of carrots, all dehydrated and rehydrated in different teas with super interesting texture. Using the leftover nut milk to make nut ricotta (no milk at all) is cool. Bright acidity from carrot and elderflower was the star this dish. From the slightly acidic to light but creamy nutty 'ricotta', good bite?. #frtakeover by @atoboynyc's @jparkato
