Cafe Trung or Egg Coffee originated in Hanoi in 1925 by Nguyen Giang. He was tasked with making cappuccino at the hotel where he worked, but couldn't find enough fresh milk. He decided to try using egg yolks, whipping them up and adding cheese and butter and then poured it into the hot coffee.
