A quick flight north and I'm now in Hanoi. This is a small city with a lot going on. Bun Cha is a local dish of the city. It's bbq pork served w rice vermicelli, leafy greens such as lettuce, purple basil, cilantro and bean sprouts. The meat is wrapped in local betel leaf to enhance the flavor. The broth, or dipping sauce as they call it is made from water, sugar, rice vinegar and fish sauce. There is also sliced green papaya in there to boost digestion.
