This is Eloy Cuadros and he has worked this bar at for over 50 years and carries the torch of the pisco sour. Made popular by an American, the pisco sour came into its own here at the Hotel Maury and this man is in part responsible for it. He could not have been nicer and it was an honor to meet him.
