I (@rmtimbre) didn't get to eat at Miles in Bordeaux during my first trip here two years ago but finally had lunch there a few days ago. Dishes like this duck--sliced thicker than I've ever had it before--slayed me. And then I found out the chefs only cook on induction burners. Wow. (Amended from earlier with the wrong photo.
