Caffè Leccese, a delicious drink from Italy’s southern province of Puglia. The basic premise is a sweetened almond milk and espresso over ice. Sadly most supermarket almond milk is flavourless and thin, so it’s better to make something at home. You could like me make an almond syrup, but to really bump up the almond flavour I add a few teaspoons of almond butter to the mix. What I love about this combination of ingredients is that it really tells us about the history of Puglia and the lasting impact of the Arab world through food.

100g sugar
100ml unsweetened almond milk
2 tsp almond butter

Add all of it to a pan and bring to a gentle boil until the sugar has dissolved. Leave to cool and chill in the fridge

To make my home version of a Caffè Leccese, add a few ice cubes to a class, 2-4 teaspoons of the almond syrup to your taste, a splash of almond milk and then float over your espresso shot. Stir and enjoy!
