Fougasse 🌿 the beautiful French bread shaped like a leaf, these are from @luneursshanghai and I split them open carefully to make a sandwich 🥪 Fougasse is most common in Provence but it goes back to Roman origins to a bread called Panis focacius which is also the granddaddy to Italian focaccia! These thinner breads were developed to test the heat of wood burning ovens to make sure that larger more substantial loaves were cooked properly and nothing went to waste. The holes in the bread also maximise the surface area giving even more delicious crust #symmetrybreakfast
