甜水面 Tian Shui Mian, or sweet water noodles. They’re a classic of Sichuan cooking, thick chewy noodles with a rich sweet soy sauce with a hit of spice. You’ll need to also make a 复制酱油 fuzhi jiangyou, a infused and sweetened soy sauce that keeps in the fridge for about a month and has so many uses from tofu to salads.
