The missing piece is that all foods also contain different amounts of anti-nutrients, and different people are more or less sensitive to different anti-nutrients. Why aren’t we talking more about those?  Imagine if someone gave you food with a normal amount of calories, a ton of nutrients, and just a little bit of mercury and lead, and cyanide. Typical thinking would ignore that last part even though it really matters for your short-term and long-term health.   Every single thing you eat is a mix of energy, good stuff, and bad stuff. Focus first on eating less bad stuff. Then focus on getting more nutrients. And then make sure you get enough energy from your food (and make sure that you don’t eat all the time either!)  Calories aren’t bad. Nutrients are good. Anti-nutrients are a bigger issue than you think. And yes, kale is a poor choice, but many veggies are good for you.
