All of the yellowtail from the Fukuoka Prefecture is not farmed but caught naturally. Sashimi and sushi that make the most of the sweet flavour and melt in your mouth texture, and "teriyaki" a grilled dish and "yellowtail radish" the simmered dish, are both signature delicacies of Japanese New Year.
