I usually include loads of vegetables INSIDE my pasta sauce - I grate carrot, zucchini (courgette), mushroom and pumpkin and add it to my sauce. I LOVE pasta, so I personally don't often eat zoodles (zucchini or courgette noodles), but they're a perfect choice if you're looking to try something new and healthy. You could even have a combination of traditional pasta and zoodles in the one dish!  Zoodles are a great alternative to pasta if you're looking to increase your veggie intake, or if you're looking for a lighter meal option. We all know that the more vegetables we can incorporate into our diet, the better!   They are also SO easy and quick to prepare. Just use a spiraliser, mandolin or shave the zucchini thinly with a peeler to create noodles. Set aside on a paper towel to soak up any excess moisture. Heat some olive oil in a pan on medium heat and add the zucchini noodles, then cook for 1-2 minutes until the zucchini has softened, stirring occasionally. Remove from the heat and add your favourite sauce (pesto sauce or bolognese would work well). Season with salt and pepper, and enjoy! Lots of supermarkets also stock ready made zoodles, perfect to use if you're really short on time.
