"Vegetables are boring”
Haha… listen, I’ve heard this before but trust me, there are SOOOO many ways to make vegetables the best part of your meal. Eating “healthy food” doesn’t mean eating bland, boiled vegetables.
Here are some ideas:
✅ Grate them and add them to fritters, zucchini is so good for this!
✅ Make stuffed vegetables (they are called Yemista in Greece). You can make them using whatever vegetables you like but my favourite is capsicum (or bell peppers).
✅ Add them to a homemade dip, I like making hummus and adding sweet potato or pumpkin.
✅ Grate them and add to pasta sauces. I usually add carrot, zucchini and pumpkin to my bolognese.
✅ Have them fresh in a salad with your favourite dressing. I add olive oil, lemon juice, garlic, dried oregano, salt and pepper.
✅ Char them on the BBQ.
You don’t even realise how many vegetables you’re eating when they’re included in your meal like this!
