I’m so very much in love with this simple parsnip cake (yes, parsnip) it’s beautifully spiced and makes for the perfect companion to a cup of black tea on these still wintry afternoons - I’ll put a link in profile-

the recipe is from my @yankeemagazine column in this March/April issue. I was excited to use one of my favorite New England delicacies - spring dug parsnips - in a slightly less expected way. Though they are still wonderful pan fried in a little butter with some chopped toasted hazelnuts .
