INGRED 1 ripe banana, mashed well 3⁄4 cup organic sugar 3⁄4 cup unrefined organic coconut oil 1 teaspoon organic vanilla extract 1 cup water 2 1⁄2 cups gluten free our (Bob’s Red Mill has the best results) 1 cup almond meal flour 2 tablespoons corn starch 1⁄4 teaspoon sea salt 1 tablespoon matcha powder, sifted 1 teaspoon baking soda 1 tablespoon apple cider vinegar FROSTING dark chocolate coconut frosting for two-layer cake: 2 3⁄4 cups Confectioner’s sugar, sifted 1 1⁄2 cups dark unsweetened cocoa powder, sifted 1⁄2 cup plus 2–3 tablespoons coconut milk DIRECTIONS Coat 1, 8 or 9-inch pan(s) with unrefined coconut oil or baking spray. In a medium mixing bowl, mash your banana well, cream the sugar and coconut oil, mix in the vanilla, and water, whisk well. In a small mixing bowl, add the dry ingred. Add in your sifted matcha powder last. Mix, using a whisk until combined. Very last, add in the baking soda and apple cider vinegar, fold in well. Immediately pour the batter into the cake pans, place into the lower rack of a 350 degree oven, bake for 26 minutes. Remove from the oven, cool. FROSTING In a large mixing bowl, add together your confectioner’s sugar, unsweet- ened cocoa powder and coconut milk! Whisk well together to combine, mix well until creamy, frost & decorate.
