Day 7 and the final day of our 7th birthday week. Starting the morning with a “Croissant 101” class with a few of our most croissant-enthused guests. Every morning, our teams around the world slice open our viennoiserie and send me photos for a daily quality check, so I wanted to share what we look for with some of our guests - from the shape of our croissants and that golden, flaky exterior, to that beautiful honeycomb crumb on the inside.
