7 years ago today, it was the night before we opened our doors for the very first time on a quiet stretch of Spring Street. I worked through the night, getting all of our viennoiserie and pastries ready, watching the croissants and DKAs rise, finishing the last few touches on our cakes, testing the espresso machine one last time, polishing the mirrors, drilling a few last screws into place. I was scared, exhausted, anxious, and excited. I put everything I had into this little shop, and we had a small team of just 4 people to start. I didn’t know that the next day, opening day on November 3, 2011, would change my life forever. There have been countless long days and nights, tough mornings when things just didn’t turn out the way I wanted them to, and amazing moments when I’ve met so many of the most wonderful people from around the world. And now when I look back at those early days, it was all worth it. Thank you to everyone who has made our little bakery into what it is today - I’ll never stop doing my best for you. See you tomorrow when we throw a 7th birthday party here in Soho, with a few surprises in store for you. #DABTurns7
