Set your ice cream cake on fire! Baked alaska is pretty much guaranteed to make an impression on those at the table. As Gabrielle Hamilton writes in @nytmag, “baked alaska is a simple ice-cream cake, but with the tension of a good novel (will the delicate protagonist — the ice cream — survive the flames?) and the beauty of a poem.” There are many variations of the components in this dish. @nytmag’s version includes pistachio cake, lemon semifreddo and Italian meringue. It’s not easy — you have to attend to the cake, the ice cream and the meringue, in the same way a mason lays stone. But there’s plenty of opportunity for fun and flourish once the foundation is secure.
