Almond cookies of all sorts, again from Puglia. The "heel" of Italy loves almonds (kind of the way Sicily loves pistachios). They have amazing almond granita, and they serve their espresso on ice and almond milk in summer. All those nuts and dried and candied fruits used abundantly in south of Italy can be traced back to the era when "Saracens", or the Arab tribes from the Middle East had conquered this area.
