Macho Gazpacho: Peeled plum tomatoes, seedless cucumber, celery, onion, garlic, red chilies, EVOO, a slice of bread, cilantro, salt, Tabasco, and then add ice to quick-chill. Blend, then top with finely chopped veggies for texture.

Burgers: Mix ground turkey or beef, drained green chillies, garlic, grated onion, cumin, cilantro, salt, pepper, and green New Mexican chili powder. Cook, and top with pepper jack.
Salsa Verde: Saute roasted tomatillos, white onion, jalapeno & garlic. Process with cilantro, cumin, and drizzle.

Guacamole: Mix minced onion and jalapeno, grated garlic, salt, and lime or lemon juice. Let it bleed for 10 minutes and then drain. Add avocado.
