#BandWidowDinner #11 - Soup’s on! Garden-fresh escarole with pancetta, onion, leek, garlic, and a parm rind. Simmer in homemade stock, add Tuscan white beans and finish with tons of lemon and EVOO! Paired with baby eggplant: Remove the flesh, chop it and drain. Roast the shell and fill with celery, baby fennel, garlic, cubanelle pepper, the eggplant flesh, and grated tomato, plus al dente fregola sarda (Sardinian couscous).
