#BandWidowDinner #12 - Lentil Cakes with Fresh Tomato Sauce. For lentils - cook to tender and mash half of them with cooked, cooled carrot, celery, shallots and garlic, then add chili pepper, sherry, rosemary, thyme, salt and pepper.
Add ground walnuts, breadcrumbs, Parmigiano-Reggiano, and an egg. Cook the patties in olive oil til crisp and hot all the way through. For the sauce: Peel and food mill fresh Roma or plum tomatoes. On medium heat, heat evoo and butter, then add garlic, tomatoes, basil, and salt. Simmer to thicken a bit.
