Ancient olive trees in Ceglie Messapica, Italy. In Tuscany and Puglia, olive oil is more than something to drizzle over a dish when you want to impress company. It is a lifestyle. It is a necessary ingredient at every meal. Or so a @nytimestravel writer learned when she traveled to an olive oil farm just outside of Florence to meet six of the region’s most respected olive oil producers. The photographer Giulio Piscitelli photographed these ancient trees on property owned by Angelo Silibello, a chef who is something akin to a sommelier for olive oil.
