Hand pulled noodles in Lanzhou, China. I went last November at the start of winter when the day time temperature hit a high of -10c (14F) ❄️ In Lanzhou this dish is better known as 牛肉面 （beef noodle) or 牛大 rather than the name it is called by internationally 兰州拉面 Lanzhou Pulled Noodles. In the 19th century when Chinese immigrants arrived in the Japanese city of Yokohama, they continued to make lamian which continued its evolution into the dish known today as ramen. Despite the colour the soup is not a ferociously spicy one and diners add colourful, crunchy side salads and pickles to round off the experience.
