花卷 aka flower buns or twists, are a common sight across China at breakfast time. Like the petals of a flower, they are usually filled with green onion but at this shop I found in Shenzhen 深圳 they had all sorts of interesting twists on the classic recipe. Shenzhen is a new city and whilst many people might find it culinarily less interesting than its neighbours Guangzhou and Hong Kong, I find the story of internal Chinese migration very fascinating. For a city with no prescribed food history, many entrepreneurial businesses have a carte blanche to do whatever they like. 40 years ago people from all over China arrived for work and now you can find all sorts of interesting oddities from street food to fine dining.
