I know a lot of people like meal prepping - you could spend one hour a week (or less!) cutting up your vegetables, such as sweet potato and pumpkin, and protein and then putting them in containers so throughout the week you can grab whatever you feel like each day and make a delicious meal like this that is really healthy. Anyone who knows me knows that I do NOT meal prep (I like deciding on the day 😂). But my meals are still always quick and easy to make, for example I like to use microwave rice cups to save me time from cooking it on the stove and adding that to my lunches.
