Who else loves quick and easy meals?! 🙋
When I have busy days where I am working or running around with Arna, I LOVE making meals that take no time at all but are still super healthy. 🙌 This simple salad dish is perfect for when you want to get more nutrients in but you are low on time. It is full of fresh vegetables and healthy fats so you will be satisfied for longer. Making a dish like this can be done in MINUTES, all you need to do is combine:
✅2 cups cherry or grape tomatoes, halved or quartered
✅1 ripe avocado, diced
✅1 large cucumber, halved and sliced
✅1 medium red onion, diced
✅Handful of mozzarella
Then mix together 1/4 cup basil pesto, 2 Tbsps lemon juice, sea salt and fresh ground black pepper to taste, add to your salad and you're done!
If you're trying to include more protein in your diet you could also have some grilled chicken or salmon on the side. 😍
